This is not really a quiche because there is no dough, but this is exactly what makes it an healthier alternative! We keep the benefits of the filling and ditch the less nutritional part (aka the white flour and fast carbs).
This makes the recipe much simpler, and faster than traditional quiche. It is also grain-free and dairy-free.
We make it the day before and eat it warm or cold for breakfast 😋
5 eggs
75g sun-dried tomatoes (they should contain only tomatoes + olive oil)
150g mushrooms
garlic powder
salt & pepper
Salt the mushrooms and cook them in a pan
In the meantime, beat the eggs with salt and pepper
When the mushrooms have already let out a lot of water, add a generous amount of garlic powder
Cook a bit more so that the garlic coats the mushrooms very well
Add the sun-dried tomatoes and mushrooms to the eggs
Bake for 25 min
